A Properly Sweet and Hot Grilled Ham and Cheese

INGREDIENTS:

- Several very thin slices of deli ham
- Sourdough bread
- Butter
- Your favorite cheeses (I swear by a mix of American, for the melt, gruyere, and something creamy, like a very soft brie, or goat cheese)
- Profanity Jam's Berry Habanero Jelly

 

DIRECTIONS:

1. Butter one side of each slice of bread.

2. Spread the non-buttered side with jam, then layer cheeses and ham, always leaving some sort of cheese next to the bread to act as the “glue” that hold the sandwich together.

3. Grill, butter side down, on a hot griddle or skillet, flipping when golden brown.

4. After flipping, cover sandwich with a domed pan lid to achieve true meltiness while the second side browns. (If necessary, remove from heat and keep the lid over the sandwich until everything is melted and crispy at the same time.)

Grilled cheese hack #1: I highly recommend cutting the sandwich in half before grilling – it provides more exit point for the cheese and jam to escape the bread and crisp up on the griddle.

Grilled cheese hack #2: Using mayo in place of butter gives an almost crispy batter finish to the grilled sides – after all, mayo is salt, eggs and oil, right?
