Serves: 4
Time: 25 minutes
INGREDIENTS
½ lb beef sirloin
1½ cups chopped broccoli
1½ cups diced bell pepper
2 stalks leeks (sliced)
4 cloves garlic
1 tbsp brown sugar
⅓ cup Profanity Jam Habanero Jam
1 tsp + ¼ cup soy sauce
1 tbsp rice vinegar
1½ tsp sesame oil
1 tsp minced ginger
1 tsp cornstarch
Toasted sesame seeds
Scallions or chives
TOOLS
Large pan
DIRECTIONS
Step 1 - Marinate the beef
Slice the beef into bite sized strips. In a small bowl, combine just 1 tsp soy sauce, brown sugar, and two cloves of grated garlic. Toss the beef around in this mixture until coated. Stick in the fridge to marinate, or cook right away.
Step 2 - Cook the beef
Add the marinated beef stips into a large pan with a bit of oil, and cook on high heat for 2 minutes. Flip the beef once browned, and cook for another 2 minutes. Remove from the pan and set aside.
Step 3 - Make the sauce
In a small bowl combine the Profanity Jam Habanero Jam, 2 cloves grated garlic, ¼ cup soy sauce, rice vinegar, sesame oil, minced ginger, and cornstarch. Stir until combined.
Step 4 - Cook the veggies
In the large pan, add a bit more oil and the sliced leeks. Cook on medium high heat until leeks have become slightly browned. Stir and set to the side of the pan, making room for chopped broccoli and diced bell peppers. Cook them on the other side of the pan until they have browned and the leeks have caramelized.
Step 5 - Serve
Add the beef strips back in the pan and mix everything together. Pour the sauce over the stir fry and cook on high heat for 1-2 minutes or until the sauce bubbles and thickens. Remove from the heat and serve over white rice. Garnish with toasted sesame seeds and chopped scallions. Enjoy!
