Tito Eduardo's Cookies

Tito Eduardo's Cookies

Technically Grandpa Ed's cookies, but I thought if we used Habanero Jam we should spice up his name too. Since there is no sugar in the dough, these really can lend themselves as an appetizer, too!

Obviously this is a family recipe, and our family Christmas meal can't be without these on the dessert plate.  Very simple - these won't wind up on your epic fail list.

-1/2 pound Butter, softened

-2 Cups All-Purpose Flour

-6 oz Cream Cheese, softened

-Profanity Jam

Mix well and roll out on cutting board or floured countertop, about 1/4" thick. Cut out circles with cookie cutter or glass, approx. 3-4" diameter. Dollop a SMALL amount of your favorite Profanity Jam in the center of each round, fold into half circles, and press edges together. Re-roll the dough till you can't get another round. Bake at 350 for 15-20 minutes.  This makes about 36 cookies, depending on the size of the rounds. If I'm feeling fancy, I'll brush them with an egg wash, and sprinkle some demerara sugar before baking, or with a little cheese if using them for savory uses!

Even though what I'm about to write is blasphemy to the family - I think this dough is incredibly bland.  Maybe a little sugar or salt in the dough?
