These gluten-free Passion Fruit-Filled Muffins are a delicious way to start your day. Each soft, golden muffin is bursting with a sweet-heat surprise with our Passion Fruit Habanero Jelly, giving you that perfect balance of fruity brightness with a subtle kick.

Over the Spring we teamed up with Food Social for a Spring Picnic campaign! Many of the creators have allowed us to share their recipes using our habanero jelly's!

Ingredients
• 2 cups Gluten-Free 1-to-1 Baking Flour - Bob's Red Mill
• 8 Tbsp Butter, Salted, Room temp
• 2 Eggs
• 1/3 cup Sour Cream
• 1/2 cup Granulated White Sugar
• 1/2 cup Brown Sugar
• 1 tsp Baking Powder
• 1 tsp Baking Soda
• 2 tsp Vanilla Extract
• 1/2 cup Almond Milk

Crumble (optional)
• 1/3 cup Gluten-Free 1-to-1 Baking Flour - Bob's Red Mill
• 1 Tbsp Granulated White Sugar
• 1 tsp Brown Sugar
• 1 tsp Cinnamon, Ground
• 4 Tbsp Butter, Salted, Melted
Drizzle
• 1/3 cup Powdered Sugar
• 1 Tbsp Almond Milk


Filling
• 1 Passion Fruit Habanero Jam - Profanity Jam

• Preheat oven to 350 degrees Fahrenheit

• Let's start with the crumble, in a small bowl mix butter, flour, sugar and cinnamon
• You can use a fork and mix the ingredients together
• This should form a dough consistency that can be broken apart or softly pushed together• In a large bowl cream together room temperature butter and sugars with a hand mixer
• Once light and fluffy add in the eggs one at a time
• Next, add the vanilla extract and sour cream
• Then add the flour, baking soda and baking powder but do not mix yet
• Add the milk and then use a handmixer to combine all ingredients thoroughly
• Spray a Muffin pan
• Add cut parchment paper or Muffin liners to a Muffin pan
• Scoop Muffin batter and fill liner
• You can Sprinkle the crumble on top or choose to leave the crumble off
• Bake at 350 degrees F for 25-28 minutes
• While allowing muffins to cool for 15 minus start on your drizzle
• In a small bowl combine confectionery powdered sugar and milk with a fork
• Using a straw or small piping bag fill each muffin with passion fruit Habanero Jam
• Then use your fork and drizzle each muffin with icing
Notes
I used a medium cookie scoop / 2 oz per liner. In order to create a hole inside the muffin I used a glass straw to create a well for the filling
